In Mexico (especially in the central regions) it&#8217;s often a single corn tortilla folded in half and toasted on a hot griddle called a comal. Enchiladas verdes are doused in a spicy green sauce made from tomatillos (green tomatoes), while enchiladas rojas get a red chilli sauce. But in Mexico it&#8217;s a thousand times better than the stuff you buy in a plastic tub back home. It&#8217;s made from perfectly ripe avocados (which taste like butter here), fresh coriander, lime, onion and sometimes a little tomato. It&#8217;s served with crunchy totopos (tortilla chips).<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"6_Mole\"><\/span>6. Pieces of white fish are coated in batter, fried until golden and served in a tortilla with shredded cabbage, pico de gallo and a creamy mayonnaise sauce.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Street_food_how_to_do_it_safely\"><\/span>Street food: how to do it safely<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Eating street food in Mexico is an experience it would be a crime to miss, yet plenty of people are scared of &#8220;Montezuma&#8217;s revenge&#8221;. We eat on the street all the time, and you just need to follow a few basic rules.<\/p>\n\n\n\n<p><a href=\"https:\/\/culturestraveled.com\/street-food-mexico-city\/\" rel=\"nofollow noopener\" target=\"_blank\">The most reliable street food rule according to seasoned travellers<\/a> is simple: eat where there&#8217;s a queue of locals and where the food turns over fast. That means the ingredients are fresh and haven&#8217;t been sitting out in the sun. After all, the locals wouldn&#8217;t want to poison themselves either.<\/p>\n\n\n\n<p>The classic traveller&#8217;s rule applies: &#8220;Boil it, cook it, peel it, or forget it.&#8221; Choose stalls where you can see the food being prepared right in front of you and served hot. <a href=\"https:\/\/logds.com\/mexico-city-street-food-safety-checklist\/\" rel=\"nofollow noopener\" target=\"_blank\">A big hygiene red flag<\/a> is when the same person who&#8217;s preparing your food (often with bare hands) also handles the money. Here are a few things you have to try:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Mezcal:<\/strong> While tequila may only be made from blue agave in a specific region, mezcal in Oaxaca is produced from more than 30 species of agave. The agave hearts (pi\u00f1as) are slowly roasted in underground pits, giving mezcal its distinctive smoky flavour. It&#8217;s sipped slowly from small bowls (copita) and accompanied by orange slices with salt mixed with crushed worms (sal de gusano).<\/li>\n\n<li><strong>Tequila:<\/strong> Proper tequila made from 100% Weber blue agave tastes nothing like the stuff you knock back at a club. You don&#8217;t down it with lemon and salt \u2014 you sip it slowly.<\/li>\n\n<li><strong>Agua fresca:<\/strong> Fresh water blended with fruit. You&#8217;ll come across flavours like watermelon, mango, tamarind or sweet rice horchata with cinnamon. A refreshing icy drink that&#8217;s brilliant for cooling the burn of chilli.<\/li>\n\n<li><strong>Champurrado:<\/strong> <a href=\"https:\/\/oaxacatraveltips.com\/drinks-oaxaca\/\" rel=\"nofollow noopener\" target=\"_blank\">Travellers strongly recommend champurrado<\/a>. It&#8217;s an incredibly thick, velvety hot chocolate thickened with masa corn dough, scented with cinnamon and real Oaxacan chocolate. It&#8217;s almost a drinkable dessert, perfect with morning churros.<\/li>\n\n<li><strong>Caf\u00e9 de olla:<\/strong> Traditional Mexican coffee brewed in a clay pot (olla) with brown cane sugar (piloncillo) and a stick of cinnamon. It&#8217;s very sweet and smells wonderful.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Vegetarians_and_vegans_in_Mexico\"><\/span>Vegetarians and vegans in Mexico<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Although Mexican food is full of fresh vegetables, beans and corn, for vegetarians and vegans it can be a bit of a minefield.<\/p>\n\n\n\n<p><a href=\"https:\/\/www.tastingtable.com\/1566374\/why-refried-beans-not-vegetarian\/\" rel=\"nofollow noopener\" target=\"_blank\">Vegetarians need to watch out for hidden animal fat<\/a>. Refried beans (frijoles refritos), tamale dough and various street patties are very commonly made with pork lard (manteca de cerdo). It gives the food a distinctive flavour and texture, but it&#8217;s a problem for us.
