The path begins in the narrow stone lanes above the main square and slowly climbs through a fragrant pine forest full of Mediterranean herbs, agaves and tall cacti. <strong>The climb takes roughly twenty to thirty minutes<\/strong>, and although it can be a bit of a slog in the summer heat, the incredible view from the top instantly makes up for every drop of sweat.<\/p>\n\n\n\n<p>From the mighty stone ramparts you&#8217;ll get an <strong>absolutely breathtaking panorama over the whole of Hvar Town<\/strong>, with its typical red roofs, the busy harbour and especially the nearby green Pakleni Islands scattered across the deep blue sea. Surprisingly, the name of this archipelago has absolutely nothing to do with hell \u2014 it comes from the old local word <em>paklina<\/em>, the dark pine resin traditionally used as a waterproof coating for wooden boats. Today the area is <strong>synonymous with the most beautiful and cleanest beaches in the whole region<\/strong>, drawing thousands of tourists from around the world to swim here.<\/p>\n\n\n\n<p>Getting to these islets is incredibly easy, as <strong>small wooden taxi boats shuttle back and forth from Hvar&#8217;s main promenade every 20 to 30 minutes<\/strong>. The crossing itself takes around ten to fifteen minutes, and a return ticket to the closer islands, such as Jerolim, costs around \u20ac10 to \u20ac15. Today it&#8217;s an incredibly photogenic place full of narrow stone lanes, old bell towers and shady little squares, where time seems to have stopped centuries ago and you can rest from the crowds.<\/p>\n\n\n\n<p>As you wander the town, you&#8217;re bound to come across local restaurants and traditional konobas (taverns) tempting you with their renowned specialities. <strong>The island&#8217;s traditional culinary pride is the so-called gregada<\/strong>, a historic Dalmatian dish of white fish slowly and gently stewed in a wide pot on a bed of sliced potatoes with a generous helping of onion, garlic, quality olive oil and local white wine. It&#8217;s here that the famous and well-attended Lavender Festival is held every year at the end of June. These include, for example, the very fresh, light white variety Bogdanu\u0161a (which literally translates as &#8220;gift from God&#8221;) and the lesser-known but intriguing Pr\u010d and Darneku\u0161a. The king of all the local wines, however, is undoubtedly the <strong>fuller, beautifully earthy red Plavac Mali<\/strong>, grown in the most extreme conditions.<\/p>\n\n\n\n<p>The very best grapes of this premium Plavac Mali variety come from the <strong>incredibly steep southern slopes in the Ivan Dolac and Sveta Nedjelja areas<\/strong>. The vineyards here have gradients of up to 40 degrees, and the vines grow under the magical influence of the so-called triple sun. This means the plant catches direct sunlight from the sky, heat reflected off the sea surface from below, and additional heat radiating from the baking white limestone rocks.<\/p>\n\n\n\n<p>Because of this extreme, inaccessible terrain, <strong>the entire autumn harvest has to be done exclusively by hand<\/strong>, without any heavy machinery. The result of all that hard work is a truly top-class, elegant wine full of deep mineral notes and a high alcohol content.
