He does it all with a deep love for the town he calls home. The restaurant cooks exclusively with local ingredients, and he personally selects wines from around the globe. It&#8217;s an absolute paradise for anyone who appreciates fine wine and Czech cuisine with a modern twist. Curious about where we&#8217;re talking about? You might have already guessed. The icy air carried the scent of cinnamon and pine needles, Christmas music drifted through the streets, and we couldn&#8217;t help but admire the town&#8217;s charming centre. This is where the <a class=\"thirstylink\" title=\"Penzion Thir\" href=\"https:\/\/loudavymkrokem.cz\/en\/penzion-thir\/\" target=\"_blank\" rel=\"noopener noreferrer\">restaurant and guesthouse Thir<\/a> now resides. The name is no coincidence \u2014 that esteemed historian was called Karel Thir. &#8220;His family owned this house for about three hundred years,&#8221; says Honza \u010cul\u00edk, co-owner and manager of Thir. It turns out Honza and Karel Thir share more than just an address. Each dish was more like a work of art on our plates, a symphony for all the senses. We spend the entire weekend wide-eyed, marvelling at everything they serve us \u2014 from breakfast to dinner. We find ourselves savouring dishes we&#8217;d normally never order. And we can&#8217;t stop wondering how they&#8217;ve managed to keep such divinely prepared cabbage a secret from the rest of the world. If you think we&#8217;re exaggerating, go and see for yourself. But fair warning \u2014 you&#8217;ll be thinking about it for a long time. During our weekend, the cooking is Czech through and through, but with the creativity of the finest culinary masters.<\/span><\/p>\n&nbsp;\n\n<figure id=\"attachment_51504\" aria-describedby=\"caption-attachment-51504\" style=\"width: 870px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-51504\" src=\"https:\/\/www.loudavymkrokem.cz\/wp-content\/uploads\/2023\/05\/5-2048x1365.jpg\" alt=\"Honza \u010cul\u00edk, owner of Penzion Thir in T\u00e1bor\" width=\"870\" height=\"580\" title=\"\"><figcaption id=\"caption-attachment-51504\" class=\"wp-caption-text\">Every town could use its own Honza \u010cul\u00edk.<\/figcaption><\/figure>\n\n&nbsp;\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Christmas markets happen to be in full swing in T\u00e1bor, and there&#8217;s not a tacky souvenir in sight \u2014 just local products brimming with humour and tradition. Like him, we&#8217;re drawn to authentic wines \u2014 the kind that boast a pure, honest flavour with no chemicals or cosmetic touches. We&#8217;ve become particularly fond of sulphite-free wines. They&#8217;re rather magical, you see. You can drink several bottles and wake up the next morning without the slightest headache.<\/span><\/p>\n&nbsp;\n\n<figure id=\"attachment_51498\" aria-describedby=\"caption-attachment-51498\" style=\"width: 870px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-51498\" src=\"https:\/\/www.loudavymkrokem.cz\/wp-content\/uploads\/2023\/05\/10-2048x1365.jpg\" alt=\"Biodynamic wines at Penzion Thir\" width=\"870\" height=\"580\" title=\"\"><figcaption id=\"caption-attachment-51498\" class=\"wp-caption-text\">You can happily enjoy a few extra glasses at Thir \u2014 no headache to worry about.<\/figcaption><\/figure>\n\n&nbsp;\n<h2><span class=\"ez-toc-section\" id=\"%E2%80%9CThe_Longer_I_Studied_International_Relations_the_More_I_Realised_How_Important_Local_Ones_Are%E2%80%9D\"><\/span><b>&#8220;The Longer I Studied International Relations, the More I Realised How Important Local Ones Are&#8221;<\/b><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Walking back to the guesthouse, we find ourselves wondering about Honza \u2014 who he is, how he ended up here, and how he managed to create such an extraordinary place. After the tasting and dinner, we catch up with him in the wine bar and get the full story.<\/span><\/p>\n&nbsp;\n\n<figure id=\"attachment_51505\" aria-describedby=\"caption-attachment-51505\" style=\"width: 870px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-51505\" src=\"https:\/\/www.loudavymkrokem.cz\/wp-content\/uploads\/2023\/05\/12-2048x1365.jpg\" alt=\"V\u00dd\u010cEP craft beer bar in T\u00e1bor\" width=\"870\" height=\"580\" title=\"\"><figcaption id=\"caption-attachment-51505\" class=\"wp-caption-text\">If you prefer beer, head to V\u00dd\u010cEP after dinner<\/figcaption><\/figure>\n\n&nbsp;\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Honza studied international relations, but as he puts it: &#8220;The longer I studied international relations, the more I realised how important local ones are.&#8221; After university, he had no idea what to do with his life, so he flew to Canada to work \u2014 planting trees, cleaning, whatever he could find. &#8220;Doing that kind of work gave me time to think about the meaning of life, and it became increasingly clear that I wanted to return to my hometown and help it grow and improve.&#8221; His eyes light up when he talks about T\u00e1bor. &#8220;Canada is a great country, but just take a walk through T\u00e1bor. You won&#8217;t find towns like this anywhere over there.&#8221;<\/span><\/p>\n&nbsp;\n\n<figure id=\"attachment_51506\" aria-describedby=\"caption-attachment-51506\" style=\"width: 870px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-51506\" src=\"https:\/\/www.loudavymkrokem.cz\/wp-content\/uploads\/2023\/05\/16-1-2048x1365.jpg\" alt=\"Beautiful doorways in T\u00e1bor, Czech Republic\" width=\"870\" height=\"580\" title=\"\"><figcaption id=\"caption-attachment-51506\" class=\"wp-caption-text\">We&#8217;ll definitely be back in T\u00e1bor \u2014 and not just for the beautiful doorways and wine \ud83d\ude42<\/figcaption><\/figure>\n\n&nbsp;\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Thir isn&#8217;t his only project either. A few months ago, he opened V\u00dd\u010cEP, a craft beer bar on \u017di\u017ekovo Square, serving beer from the local family-run microbrewery Obora. If beer is more your thing than wine, you should absolutely pop in. Pair it with a bite from the local butcher&#8217;s shop Li\u0161ka or from the Bl\u00e1h\u016fv Dv\u016fr dairy farm. And you might just hear some live music too \u2014 local musicians regularly drop by and play sets that&#8217;ll put a smile on your face.<\/span><\/p>\n&nbsp;\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">This certainly won&#8217;t be our last visit to T\u00e1bor. I&#8217;m already looking forward to strolling through the town again in spring, visiting Hole\u010dek Gardens, stopping by Ctibor\u016fv Mill \u2014 home to the Cesta cultural centre \u2014 and exploring the local community garden. We&#8217;ll definitely pick up some of Chris&#8217;s brilliant cheese and ricotta gnocchi to take home. And in the evening? Poetry made from food and wine at Thir, naturally.
